Unusual chocolate
The "Insolites" are creations that defy standard categorization. Neither quite praliné nor truly ganache, they are built around a central ingredient that the chocolate merely dresses: a whole roasted Piedmont hazelnut, a crunchy almond, soft nougat, or pistachio- or raspberry-infused marzipan. Here, the coating masks nothing; it protects the center, adds a note of cocoa, and allows the nut or confection to take center stage.
This freedom allows for textures found nowhere else in the collection: the distinct crunch of an almond, the softness of nougat, the grainy texture of marzipan, and the slight crackle of roasted cocoa bean nibs.
Each one tells a story. The *Pain d'épices*—with its Christmas-spice-infused praliné—evokes the holiday season. The *Oursin* conceals a praliné center beneath its pistachio marzipan shell. The *Pastille Fèves* captures the essence of cocoa at its source, leaving the bean nibs visible. As for *L'Impératrice*, it is defined by simplicity: an almond, dark chocolate, and nothing else.
